61% Semi-sweet Dark Chocolate. Sweetest and softest of the three bars, with flavor notes of fudge, citrus and lightly roasted cream, with the highest cocoa butter content of the three bars. Red fruit and floral notes hit the tongue last, leaving a citrus, creamy impression.

75% Dark Chocolate. Still a bit creamy, with a sour cocoa-aroma fully realized, with floral tannin notes at the flavor foundation due to the reduced cocoa butter content. Melts slower on your tongue than the 61% bar and leaves a dryer, earthier flavor impression.

85% Dark Chocolate. Crisper when breaking into bites and slower when melting on your tongue, this very low cocoa butter and very high cocoa content bar is bitter, nutty, and tannin-dense with an astringent dryness due to the absence of fat and medicinal concentrated flavonoids that remain after fermentation of the red-purple cocoa beans.
Good chocolate is best appreciated when you allow it to melt a bit in your mouth. In fact, we temper our chocolate so that it melts as close to body temperature as possible. Melting the chocolate rather than just chewing it allows more of the chocolate to come into contact with the taste receptors on the surface of your tongue, and flavors in general are enhanced at warmer temperatures, too.
